Nabot is a single-vineyard red wine produced by Bodegas Santalba in Rioja Alta, Spain. It comes from a very old vineyard believed to be more than 110 years old, with extremely low yields. The wine is based on 80% Tempranillo and 20% other varieties, capturing the concentrated character of an exceptional old-vine Rioja site.
After manual harvesting in 12kg crates, the grapes undergo pre-fermentation cold maceration followed by temperature-controlled fermentation and extended skin contact. Malolactic fermentation takes place in French and American oak barrels, followed by 17 months of barrel aging. Nabot is bottled unfiltered to preserve its character and structure.
