Un Sueño en las Alturas 2021 is a distinctive Ribera del Duero red from Pago de los Capellanes, produced from old Tinto Fino (Tempranillo) vineyards in Fuentenebro, Pardilla and Honrubia de la Cuesta. Located at the high, southern reaches of the appellation across Burgos and Segovia, these vineyards combine elevation, rugged terrain and distinctive soils to produce a fresher, more mineral interpretation of Ribera del Duero.
The 2021 is sourced from 50–60-year-old bush vines with low yields of approximately 3,500 kg/ha. Fermentation takes place with indigenous yeasts, followed by spontaneous malolactic fermentation in French oak foudres and lees work. The wine then matures for one year in French oak foudres before being bottled without clarification or stabilization, preserving its purity, structure and expressive fruit character.
