Shimizu-No-Mai Pure Dawn is a Junmai Ginjo sake produced by Takashimizu / Akita Shurui Seizoh in Akita, Japan. Part of the Shimizu-No-Mai Pure Series created for the U.S. market, Pure Dawn combines traditional sake character with a subtle fruit-driven aromatic profile and a sharper, structured palate.
Pure Dawn is blended from sake made with Akita Sake Komachi rice polished to 45% and 60%, resulting in a Junmai Ginjo with delicate apple, pear and melon aromas. At 15.5% ABV, it balances firm acidity, fresh fruit and clean rice character in a convenient 300ml format.
